1.   Menu- what type of food would you like to serve?  How would you like to prepare it?  Can one piece of equipment be used for multiple menu items?  Don’t overwhelm yourself in the beginning.  Keep the menu simple and show off your tasty talents.

2.   Your local health department- most counties and municipalities have different codes that must be met in order for you to open your new business. Make sure you meet with a health department representative before making any purchases to ensure that you meet the minimum requirements.

3.   Location- whether you already have a site in mind or are still looking, there are many important considerations before finalizing a location.  When looking at a site think about the location.  How are the traffic patterns around the area?  Will the building be both visible and accessible to passing traffic?  What are the target demographics for your restaurant?  Will the site you choose reach that demographic?  How much work will have to be put into the site to make it operational?  Will it meet health department codes?
